The egg

The Oyster
Three preparations — natural with lemon veil, tempura with marinated cabbage, spinach gratin.
DISHES
The Hake
Hake loin from the Atlantic coast, beetroot in textures, apple emulsion from the Gorvello Distillery.
The Poultry Course
Roasted yellow chicken breast, seasonal vegetables cooked in their jus, and a classic suprême sauce.
CHEESES
Trilogy of Breton cheeses. Condiment and young shoots. Supplement €8
DESSERTS

The Pear
Pear poached with Surzur saffron, almond crisp, gros lait (Breton fermented milk).
The fig
Warm fig tartlet, fresh goat’s cheese ice cream, maple syrup.
The Chocolate
72% chocolate fondant, cocoa nib tuile, buckwheat ice cream.
