Some made locally, others refined by cheesemakers in the area. Condiments and baby salad leaves.
Egg and Trout : poached egg, thin slices of home beech and vine stock smoked trout, trout roe and fish stock .
*Gulf of Morbihan oysters : Just poached in their water, hazelnut butter with herbs on chicory fondue, a hint of Espelette pepper and Pont Neuf bread soldiers
*Le Foie gras : Foie gras marinated in Fine de Bretagne brandy, spiral puff pastry, baby salad leaves and condiments.
*Scallops and Eryngii : a delicate marriage of sea and land products with oven-baked scallops, risotto and chicken cream with Eryngii (King oyster mushrooms).
*Duck :Thin slices of home-smoked duck, very tender and delicately marinated, homemade beetroot ice-cream.
Main dishes :
*Beef and Foie gras : Fillet of beef, the tenderest cut, from France, cooked to your liking, topped with a escalope of foie gras Rossini-style.
Veal : Knuckle of veal, slowly simmered on the bone, homemade glaze from reduction of juices.
Sweetbread: From French livestock, braised sweetbreads, seasoned glaze from reduction of juices.
*Monkfish: Monkfish medallions, citrus fruit and fresh herb bread crust, citrus butter sauce and seasonal vegetables.
*Seasonal fish: Occasionally black occasionally orange, depending on the fish prices at the market. Please ask us what fish dish of the day the chef has concocted.

Honey and Walnuts: revisited melt-in-the-mouth Financier (small sponge biscuit cake) with walnuts and homemade acacia honey ice cream.
*Apple: Soft apple poached in liquorice-flavoured syrup, Breton buckwheat shortbread, salted butter caramel ice cream.
Chocolate: Chocolate concerto lava cake, light chocolate ice cream, intense chocolate flavoured (100% cocoa) ganache.
Lemon: Lime Chiboust on crunchy shortbread base, lime sorbet.
